PROCEDURE
In order to COLD PRESS a product, the juice must be extracted with a few revolutions and without any addition of water or external temperature higher than this in order to preserve the beneficial components of the olive oil, its aroma and taste. It produces a smaller quantity, but better quality.
Organic Extra Virgin Olive Oil: the highest category of olive oil, the finest quality. Fruity taste and permitted acidity up to 0.8%. The richest quality in vitamin E, vitamin A, carotene, polyphenols and beneficial monounsaturated fatty acids (oleic acid).
